Scrambled Tofu

This scrambled tofu is such a great breakfast recipe. It is easy to make and always keeps me satisfied until it’s time for lunch. It’s also super healthy, with the veggies, spices and protein from the tofu. This recipe can be adapted to whatever ingredients you have on hand, for example you use mushrooms or chillies. I don’t even have quantities on here because I just throw in the amounts I want, you can’t go wrong.

Simpy heat up a small amount of olive oil in a small pan. Add in a few slices of red onion and crumbled tofu. Sprinkle in some turmeric and curry powder to add a kick and some colour. Stir to coat the tofu.

Cut up about four cherry tomatoes and add them to the pan after a few minutes. Cook a few more minutes, continuing to stir. Take the pan off the heat and throw in a handful of baby spinach. Stir through until the spinach is slightly wilted.

Serve with wholegrain toast and avocado.  Add some pepper and pink salt. Voila! A simple and satisfying vegan breakfast packed with healthy protein, carbs and fat.
